Worldwide, most mayonnaises, ketchups and other sauces are packed in stand-up pouches, or Doy Packs. These sauces tend to contain abrasive chemicals (acetic and citric acids, vegetable oils and fats).

Flexible packaging should resistant to any adverse effects of these compounds.

It is necessary to use materials with low gas permeability due the potential oxidation of the fats by atmospheric oxygen.

Products based on tomato paste (sauces and ketchup) are sensitive to environmental conditions and need additional barrier material. Furthermore the packaging needs to withstand high temperatures as the product undergoes a hot filling operation.

The packing material for fat-and-oil products is a two-layer (duplex) or three-layer (triplex) composition based on aluminum foil, polymer films and high-barrier compounds.
